Fresh and Sunny Citrus Vinaigrette

This is a great go-to recipe. Fresh orange and lemon juices replace the vinegar in this refreshing dressing. It's so delicious that you'll find a reason just to create a salad, or try it on a mixture of brown and wild rice topped with chopped toasted nuts. Yum! Did you know olives and olive oil are a good source of vitamin E and contain vitamins A and K, iron, calcium, magnesium, and potassium? They're also a great source of amino acids!

Ingredients

1 teaspoon orange zest, finely chopped
1 teaspoon fresh thyme
6 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
2 teaspoons Dijon-style mustard
Pinch salt
6 tablespoons light olive oil

In a small mixing bowl, add orange zest, thyme, orange juice, lemon juice, mustard, and salt. Blend or for about 10 seconds. Blend again while adding oil in a slow steady stream until mixture is completely emulsified.

Makes 1 cup

Chefs Tip: Homemade salad dressings are always a treat and they're a great way to use your immersion blender. Just make sure that your bowl has high enough sides to contain any splash.
