
This delicious combination of toppings on crisp toasty bites will invite creative conversation to any party. Nothing could be finer than the vibrant colors of summer's fresh tomatoes on your table. Plus tomatoes are a natural cancer fighter! These appetizers are easy, beautiful and sure to please.
Ingredients
18 baguette slices
1 tablespoons olive oil
1 tomato, diced (any of the beautiful colors)
Mozzarella cheese, sliced into small rounds 1/3" thick
1/2 cup tomato, diced
2 tablespoons basil, small leaves for garnish
Instructions
Preheat oven to 400 degrees. Arrange bread slices in a single layer on a baking sheet. Brush with olive oil. Bake 5 to 10 minutes until toasty. Place on serving tray.
Layer toasts with Mozzarella, then chopped tomato and garnish with fresh basil. These are terrific just like this or for a twist, warm them in an oven safe dish or pan under the broiler for a minute. They'll take on a whole new look and flavor.

Chefs Tip: When buying tomatoes, hold them and choose tomatoes that feel heavy for their size. Smell them to make sure they smell earthy and well, you know tomato-y. Above all, never put your tomatoes in the refrigerator. Cold temperatures turn tomatoes mealy and mushy.
