Caramelized Onion, Spinach and Gruyere Quiche

We took a flakey pie crust and smothered it with sweet caramelized onions, then topped it with delicate baby spinach and creamy gruyere cheese. The result is a show stopper. Even better, did you know onions help to facilitate detoxification and act as powerful antioxidants, stimulate immune responses and reduce inflammation? Enjoy, eat and be well.

Ingredients

Pie crust for a single crust pie, baked
2 tablespoons olive oil
3 large red onions, sliced
1/2 cup heavy cream
1/2 cup milk
Balsamic vinegar
3 large eggs
Pinch nutmeg
Salt and freshly ground pepper
12 ounces Gruyère cheese, grated and divided in half
5 ounces baby spinach leaves

Instructions

*In a large, heavy-bottomed skillet, heat olive oil on medium heat. Add the onions and cook until they become soft and transparent. Reduce your heat to medium-low and continue to cook for about 40 minutes, stirring occasionally until the onions are beautiful caramel in color. Remove from heat.

In a medium mixing bowl, whisk together cream, milk, vinegar and eggs. Add nutmeg salt and pepper to taste.

Assembling the Quiche: (The Fun Part)
Sprinkle half of your cheese into the crust forming a layer.
Spread your caramelized onions over the cheese layer.
Layer the spinach over onions.
Top with the remaining cheese.
In a bowl, whisk together milk, cream, vinegar and eggs. Add nutmeg salt and pepper to taste. Pour egg mixture over the cheese.

Bake for 35-40 minutes or until center is just set. Cool 10 minutes before serving for easier slicing.

Serves 6

Chefs Tip: *Caramelizing onions is a slow labor of love (and worth it too) so get started on your onions first. Adding just a pinch of sugar will speed it up.
