
These truffles were created as an alternative to the typical truffles you find made out of heavy cream and tons of sugar. Their flavor and texture is divine, and they're loaded with antioxidants and nutrients with the superfood combo of coconut oil and dark chocolate. Coconut oil can actually help our bodies mount resistance to both viruses and bacteria, while dark chocolate has been shown to be beneficial to both your heart and brain and is loaded with antioxidants to help free the body of free radicals. Ingredients:
1 organic vegan dark chocolate bar, at least 70% cocoa (3.2-3.5 ounces)
3 1/2 tablespoons organic, virgin coconut oil
1 tablespoon raw organic honey (or raw organic agave nectar)
1 1/2 teaspoons organic prepared coffee
1/2 teaspoon organic pure vanilla extract
1 small pinch fine sea salt
Organic unsweetened dark cocoa powder, chopped nuts or coconut (your choice, 1/4 cup each)
Instructions:
Break chocolate into small pieces and place in a microwave safe bowl. Melt chocolate in the microwave.*
Mix together chocolate, coconut oil, honey, coffee, vanilla and salt till creamy. This can be easily done in
a food processor.
Chill for at least one hour until easy to handle.
Refrigerate for an hour until firm enough to handle.
Using a melon baller, form the truffles into bite-size balls and roll them into cocoa, nuts or coconut to coat.
Refrigerate at least 3 hours before serving.
Chefs Tip: *It is preferable to melt your chocolate on a low (50%) power setting, to avoid scorching or burning it. Estimate about 1 minute for 1 ounce of chocolate, 3 minutes for 8 ounces. Run the microwave in 30 second increments, stirring in between and rotating the bowl if necessary. Finish heating when most, but not all, of the chocolate is melted. Stir the chocolate continuously until it is smooth, shiny, and completely melted.
